Researchers compared the levels of polyphenols and glucosinolates (compounds that can lower cholesterol) in adult cabbage vs. microgreen cabbage; they found higher levels of the compounds in microgreens. Researchers concluded that cabbage microgreens may be more beneficial for heart health than adult cabbage.
